Do you think if I take the rear brakes off it will save the weight that is added by my amp rack?

Yes! And I think, while you're at it, you might as well remove your front brakes too. Because, as you know, you don't need them anyway! Brakes are for pussies! The Spec V will probably handle well enough that you won't need brakes
