This is a common problem. It is caused by vibration at the water temp guage sending unit. Over time, the contact between the connector and the sending unit itself breaks down and engine vibration interrupts the signal to the guage. Replace your guage sending unit and this will probably fix the issue. If you search around you will be able to find the location of the part and instructions on how to do this.
