Well the coolant pipes are connected to both the block and the head, and those rubber hoses are a PITA even with the manifold removed, much less still in place. I really think your best bet would be to go ahead and remove the intake manifold. You would need to disconnect everything on it anyway (if you were removing it with the head). Undoing a few extra bolts and getting it out of the way would probably save you time and effort in the end.
