I've been looking for a polished intercooler diy piping kit for a while not and I found some for sale on Ebay for a decent price and they offer kits in 2.5, 2.75 and 3 inch piping kits. Which would be best for my setup?

2.5" is all you need, at largest.

Im running 2.5" hot side 3" cold side but I actually want a little bit of lag and have a custom intake Manifold and huge throttlebody :D

2.5" is the most common all the way around. and its cheap :)
