quick question... when taking the valve cover off... is it necessary to buy all new gaskets and sealant, or can i just put the cover back on with the old one?

depends on how old they are. The rubber gaskets you can re-use if they're soft and fairly new, but you will need to re-do the silicone seal on all the halfmoons.
