So, what is the biggest rim/tire combination that wont mess up the gearing? 16" rims?

as long as everything is "plus sized" you *should* be fine. plus size meaning that the rims and tires you get have the same diamerter off the stock rims and tires. i think a lot of NX's w/stock rims are a little screwed anyway. the stock tire is really a 195/55. if i recal, there is only like 1 or 2 comapnys that made that size tire..one beeing dunlap in the SP8000. most people wind up with a 195/60 or somthing like that if they need new tires..again, if i remember correctly.

i would go with a 16x7 rim with a 205/45 tire. I seen 16s with 205/40s, but I run the 45 series becuase I want a little better of a ride.

You need a 205/40/16 tire for the proper gearing.

My advice, I would consider 15" wheels. They are less expensive, the tires will be less expensive, and I *think* the tire selection is better in 195/50/15 than it is for 205/40/16. I may be wrong though.
