Could someone check my wiring for my gauges? Whenever I plug a temp sensor into a temp gauge... it skyrockets... Oil Pressure gauge sky-rockets when everything is off and slowly goes back to zero only when lights are turned on.

I wouldn't pull from those power sources, but I don't see what would be wrong with those sources.
Try getting power from a better source like its own spot in the fuse box.

dont use the climate control light, take it from the dimmer switch
and dont use the yellow wire off the radio(thats the constant power used by head units to retain info) use the red wire..this should work fine..also, try not to ground all these things off one wire.

Okay. I will try those things.
Is it possible that having too many things on one ground will cause electronics to wack out?

^if the ground isnt good, yea electronics will either not work or act funky.
Wire the gauge lights into the dimmer switch. Use the red/white and red/yellow wires out of the dimmer like pictured below and they will dim along with your instrument cluster.

Alright, update.
1) NEVER USE THE STEREO GROUND FOR GAUGES!! There is 150 ohms of resistance between the stereo ground and the chassis. Don't ask me why mine is so high, but I sound suggest not using it.
2) I wired my lights in paralell with the climate control light, and DAMN it works GREAT. Dims and everything.
