Those of you that are running 250-300hp with turbo setups. What pressure plate and clutch would you recommend? What do you all use?

Depends on what you plan to do with that type of power. I have the act heavy duty pressure plate with stock street disk with about 200whp and haven't ever had an issue with slipping.
This setup should hold upwards of 250-275whp with no problems whatsoever with normal driving. By normal i don't mean launching the car at 4k rpms and dragging.
If you want to luanch the car at high revs and do it with slicks then most people would recomend at least a 6 puck/pad disk with the heavy duty pressure plate. I would get the x treme pressure plate with 6 pad if i ran slicks.

What about a JWT PP and a Stock disk. I wont be running slicks, but will probaly launch at 2500. Do u think that will hold up?
