I would like to unbolt the entire intake off the car. (for polishing, inside and out)...

Is it going to be a bitch to do whilst on the car?

Has anyone done this, what is involved. I've got no problem doing it, but I'm curious as to difficulty (or more so, time involved).. anything i need to look out for, would i need a new gasket for it, blah blah.

If you are referring to the whole intake manifold, then it is a painful, time consuming job. I removed my intake manifold and it took like 15 hours to remove it and reinstall with two people. It would probably be faster to remove the whole engine to do this. There is virtually no space between the back of the engine and the firewall. If all you are doing is polishing, then you must really want to have the intake polished :) .
