if I go for the 87mm bore for 300ZX pistons, would I have to worry about the cylinder head or the head gasket? Would either of these have to be bored out as well?

ok you should get an 87mm head gasket. if you are turbo the 1mm of head gasket hanging in your cylinder can cause detanation

The stock head gasket will not hang in the cylinder.

if you decide on a cometic headgasket there are 86mm and 87mm they are they same price

not sure about the stock gasket but a comitic metal 86mm will hang over in an 87mm bore. don't know if you are running boost or not.If not my buddy has a brand new stock gasket for sale

There is no need for an aftermarket head gasket unless you are building a full wacko pro drag car making stupid amounts of boost.

I know people who are making 400 hp to the wheels on a stock head gasket. Have been for years. No troubles what so ever. The stock head gasket is a good one with a metal tang and covered with graphite.
