HI, I'm thinking of getting an air/fuel controller, change my injectors, more fuel pressure and getting a 300zx MAF. I would like to know if I can tune the SAFC to make it all work or I really have to go with JWT.

Yes you can use the AFC to tune it, but I highly recommend the tuning session take place on the dyno for optimal performance, and tunability.
