I just get a set of koni red inserts in the housings and I was wondering what settings are best for the street using eibach springs?

Can't answer without knowing the spring rates and the approximate weight of your car.

the front springs are 160lbs and the rears are progressive 80-180 lbs per se-r.net and there going on a 93 nx so the weight is about 2500lbs

How are the Konis working out for you? Were they hard to install onto the strut housing?
