I have been looking at the VE program and I was wondering, the acceleration tables, why are they so high compared to stock? They are all set at 219, where the stock bin, has the first 9 at lower values. What's the exact function of this table?

I have nod idea what that actually does. The stock rom I based it off had those values (JDM HP10 DE rom), I never changed them. Someone needs to fiddle with these and see if they can figure out what they do.

I don't know. I just shipped a VE ecu with the lower first values, I'm waiting to see how that one runs. It was for a VE maf though; I don't know how muc maf missizing affects stuff.
I thought that map had something to do with throttle enrichment on tip-in. Your maf doesn't respond as fast as your engine actually acts, its got a little lag. To compensate for this the ecu adds fuel and pulls timing when it sees the TP angle change radically. Thats pretty well documented in several Nissan patents. I assumed from the name of this map that it had something to do with that routine, but YMMV. The turbo programs run with this map set to 255 in all values.
