Iradic Cooling / Strange Noise

Anyone know what could cause a 92 SE-R w/ JDM SR20 to stay on (C) for several minutes? On a drive from Illinois to Texas, it was running for 3 hrs at a consistant rpm but when I drove in the city the temperature guage raises up to the middle of the temp gauge. It's really strange that you can drive to work or around town and it'll stay cool (C) for a while. When you accelerate, take turns, or drive around - the temp gauge goes right up to mid point and then goes back to (C) later on. The engine has 55K on it from what the last owner told me and has the following: HS CAI, Stillen Header, Catco Cat, 2-1/4" crush exhaust, JWT S3 Cams, Stock ECU, 300ZX radiator cap, water wetter from redline or royal purple, and a fairly new thermostat. Please keep in mind that I bought this car in Illinois and I live in Texas.. temps are between 80-100 during the day.

If this is caused by a temp sensor, which one could it be? Is it the $10 sensor for the gauge or is it for the ECU/Engine temp sensor $20? I hardly hear the fans coming on until the temp gets alittle over halfway on the gauge. Even after the fans come on, the gauge stays the same.. maybe alittle cooler. Once you take the car for a 1 mile drive, it cools down to C - even when it is 80+ degrees outside.

Another problem, when the car is started, it makes this really weird metal rotating sound. I'm not sure if it is the clutch, transmission, or engine. I was at a shop today and they heard it too. The noise only is there when the engine is fairly cold. I thought it could be the timing chain but the chain is pretty quiet. When it makes the noise, you can feel the vibration through the clutch (have to put clutch in to start the car). Anyone know what this could be? This car was RySE-R 1's.
