Brand new temp sensors now what?

Fans still run all the time after replacing temp sensors
but the temp gauge reads correctly, YAY!

I also tried swapping relays around, that was not the problem
I don't know what else to check, could it be my ECU, or maybe the wiring

Am I going to have to go to a dealer now?

What it does:
I will not be able to retest the cold start untill tomorrow, but this is what it was doing
Cold starts, have to give the car gas to get it going, and will often die untill warmed up
after warming up it will still often drop the revs to 500rpm or below, and almost stall out

This I have been able to test:
idle changes from stop to stop, sometimes its at 850, other times at 1200 or anywhere inbetween. This is after the car is warmed up
fans run non stop all the time
there is no air in the system that i know of(heat blows hot)

car has:
New T-Stat
New water pump
New O2 sensor
Cleaned AAC during motor swap
re grounded MAF
new temp sensors, both gauge and ECU

the car had none of these problems before the motor swap

Please help, I have benn having these problems since the swap and this is my daily driver

EDIT: I revised this!

Test for continuity at the harness for your water temp sensor. If you don't have continuity, reground the wire and see what happens.
